All operators and anyone preparing/packaging food must complete Certified Food Protection Manager (CFPM) training BEFORE registering with their local health department (up to $50/year). Uses a 'prohibited list' model rather than 'allowed list' — anything not explicitly banned is permitted. Acidified/fermented foods require pH lab testing every 3 years. Canned tomato products need annual lab testing. Kitchen must be in primary residence. In-state shipping of non-perishable items only. Restaurants, retail stores, and wholesale distribution are prohibited. Physical home address required on labels.
